I have been making my own cider for several years, but this year we have got a couple of 40 gallon oak barrels for the first time. I need some advice on how to use them. We will be fermenting in brewing buckets and using the barrels for aging. They are ex whiskey barrels with a fantastic smell to them. The main questio...n I need answering is will we need to sterolise them or is the whiskey good enough for that? I do not want to lose the flavour if possible but rinsing with sodium metabisulphate shouldn't take too much away. any ideas?Read more

We usualy just sterilise them with more whisky/ Rum. The key is to keep them topped up. The wood will absorb some of the cider so it will be exposed to air at the top, we just top up with water. Air is the enemy not the wood. Spirit barrels will make the cider smooth and more drinkable and taste great so good Luck.

Ian Davis Just joined - Hello!. I've made cider for some years - 100% natural, no aded sugar or yeast etc. I had a go at perry last year with culinary pears, not a great success. I've just pressed a few gallons of perry pear juice. 2 questions - (1) Does it ferment at the same low temp as cider? (2) I'm told it likes to go off - should I add campden and yeast (I'd rather not unless I really have to)
